Kale Quinoa Delicata Squash

what you'll need

1 small delicata squash
1/2 cup cooked sprouted quinoa
3 cups kale
1 tbsp olive oil
Fresh lemon juice
Garlic powder


  • Preheat oven to 350 degrees
  • Cut delicata squash length wise and scoop out seeds
  • Oil the inside and edges (not the skin) of squash and sprinkle with sea salt
  • Place squash side down and roast for 30 min
  • While roasting squash- remove kale from stem, wash and dry 

For dressing

  • In a separate bowl add 1 tbsp of olive oil, 1 squeeze of fresh lemon, dash of garlic powder and salt to taste-Mix well
  • Combine kale, quinoa in a bowl and add dressing
  • Remove squash from oven, let cool
  • Scoop kale and quinoa into delicata squash and enjoy
