Lentil Cakes With Tahini Sauce

what you'll need

*Makes 4 patties


1 cup roasted cauliflower (I had this pre-cooked in the refrigerator) 
1/2 cup + 2 tbsp, lentil, adzuki & mung bean mix (can use just lentils) cook according to package I use this brand
1 egg
sea salt
garlic powder
tahini
lemon
olive oil

directions

  • Place cauliflower, lentil mix and egg into nutri bullet or blender
  • Pulse just until combined well (few seconds)
  • Transfer to bowl -add dash of salt and dash of garlic powder (add more for garlic lovers!)
  • Heat cast iron on medium high heat with oil
  • Place small patty (4) in oil once heated up
  • Leave for 5 min then flip- turn down heat to medium low
  • Leave for 15 min to cook

For Dressing

In a bowl add:
2 tbsp tahini
2 tbsp fresh lemon juice
2 tbsp water
1/4 tsp garlic powder
Mix well -if too bitter for you add a dash of maple syrup

On a plate place some greens (I used arugula) then 2 patties

Drizzle dressing over patties and enjoy
