Spinach Pancakes


What you'll need

1 banana
2 eggs
2 cups fresh spinach
1 tbsp coconut flour
1 tbsp almond butter (or other nut butter)
1.5 tsp cinnamon
1 tsp chia seeds
2 tsp ground flax
1/4 tsp baking powder


  • Grease pan and turn on medium-low heat
  • Place all ingredients in nutri bullet or blender- blend well
  • Pour into small circles on heated skillet
  • Flip when bubbles form
  • Leave for another 2 minutes
  • Transfer to plate 
  • Enjoy with additional nut butter or syrup
