Harvest Bowl

what you'll need

2 large handfuls of kale
1/2 cup lentils
1/2 avocado
1 tbsp hummus
5-6 sliced daikon radishes
Butternut squash
Crackers
Olive oil
Fresh lemon
Sea salt
Garlic powder

Directions

  • Preheat oven to 400 degrees
  • Peel, chop and de-seed butternut squash -cut into cubes (or buy pre cut in package)
  • Place on greased pan and sprinkle with sea salt
  • Bake for 35-40 min until tender and lightly browned
  • While butternut squash is baking:
  • Wash kale and remove from stem-place in bowl
  • In separate bowl add 1/2 tbsp of olive oil, squeeze of fresh lemon, dash of salt and garlic powder -stir well (if you like a lot of dressing you can make more)
  • Pour dressing onto kale and massage well
  • On top of kale place in lentils, butternut squash, hummus, crackers, radishes and avocado
