Spinach Cauli Cashew Alfredo

what you'll need

1 box chickpea pasta
1 head of cauliflower
3/4 cup spinach
1 cup crushed cashews (or whole is fine)
1/2 tsp. sea salt
1/2 tsp. garlic powder
3/4 cup water
EVOO

Directions

Cashew Alfredo Sauce

  • Place cashews in a bowl, cover with water and let sit for at least 2 hours (mine sat longer)
  • Drain, rinse and place in nutri bullet or blender
  • Add in 3/4 cup of water, salt and garlic powder
  • Puree until smooth (can add more water if too thick) 

 

  • Preheat oven to 350 degrees
  • Wash and cut cauliflower into florets
  • Place on baking sheet sprinkle with olive oil and sea salt
  • Place in oven for 50 min
  • Wash and dry spinach, set aside
  • Cook pasta according to box
  • Drain pasta, add in spinach and 1 cup cooked cauliflower
  • Mix in 1/2 cup cashew sauce
  • Mix well - Enjoy
  • Save extra sauce in refrigerator for up to 3 days
