Avocado Egg Salad


what you'll need

2 eggs
1/2 avocado
2 rice cakes (toast of choice)
1 squeeze of fresh lime juice
1/8 sea salt
1/8 parsley


  • Fill a pot a little more than 1/2 way full
  • Heat pot to high and bring water to a boil 
  • Once water boils place eggs in pot for 10 minutes (I put eggs in with a spoon so they don't crack)
  • Remove from heat, drain hot water
  • Fill with cold water- let sit for a few minutes
  • Remove from water
  • Peel and chop eggs-place in bowl
  • Scoop in avocado- mash/mix well
  • Add in salt + lime (can use lemon too)
  • Scoop half onto rice cake top with parsley
