Cashew Crusted Salmon

what you'll need

1 piece of wild caught salmon
1/4 cup chopped soaked cashews
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp parsley
Olive oil

Salad

2 cups chopped kale
1 tbsp olive oil
1/2 tbsp fresh lemon
dash of salt
 

directions

I soaked my cashews for 2 hours prior to beginning (place cashews in bowl, cover with water, let sit, drain + discard water after 2 hrs) 

  • preheat oven to 350 degrees
  • line a baking sheet with parchment paper
  • in a bowl combine cashews, garlic powder, onion powder and parsley-mix well (use less if don't like garlic + onion) 
  • place salmon (skin side down) on parchment paper rub oil on fish side (non skin side)
  • evenly rub cashew mixture on 
  • place in oven for 15-20 min (may vary)
  • wash kale + remove from stem- place in bowl
  • in a separate bowl, place olive oil, fresh lemon + salt - mix well
  • place dressing on kale, mix well + place salmon on top
  • optional - add more crushed cashews
